Lunch

Our personal favorite is to eat leftovers for lunch.  Make extras at dinner and put the leftovers in containers so it will be all ready to take to lunch in the morning.  Another great option is to eat a big salad.  This isn't the sad iceberg lettuce/cheese/tomato poor excuse for a salad that you have seen before.  This is a power salad loaded with greens and your favorite vegetables fruits, nuts, beans and seeds.

    • Whole grains - Pick one...whole wheat tortilla, whole wheat bread, quinoa, brown rice
    • Beans - Pick one...chick peas, black, kidney, pinto, northern, canellini
    • Greens - Pick one...spinach, kale, arugula, romaine
    • Other veggies - Pick a few...broccoli, carrots, peppers, mushrooms, cucumber, sweet potatoes, squash, corn
    • Sauce - Pick one...salsa, hummus, guacamole
